Made this pancake the other day. It. Was. Amazing. Really chocolatey and decently healthy if you ask me – except for the part where I drizzled chocolate sauce and topped it with icing sugar and whipped cream. I think I may have cancelled out any benefits it might have had.
Even got a recipe for you guys cause I couldn’t just keep the awesomeness from you!
Makes 1 Big Pancake:
30g self-raising flour
10g cocoa powder
10g sugar & stevia mix OR 15g sugar (Double quantities if you don’t want toppings but just a sweet pancake)
50ml milk (I used semi-skimmed)
1/2 T vegetable oil
Pinch of salt
Combine all ingredients in a bowl and mix until a smooth batter is formed. Heat up a griddle, pan etc to a medium heat and grease if not non-stick. I usually use a little cooking spray and spread it out with tissue. Pour the batter onto the pan and cook until bubbles form over the top of the wet batter and the edges begin to cook. Flip over once and don’t press down. Flattening it is just cruel. Cook for a further 30 seconds to 1 minute (judge yourself – you are smart) and transfer onto a plate. Add topping’s and enjoy.
Probably one of the best breakfasts ever.
