Grilled Cheese w/ Caramelised Onions

‘Cheese Toastie’ and ‘Grilled Cheese’ are pretty much interchangeable to me, although when it comes down to it, toastie makes more sense seeing how the sandwich is made most of the time. However grilled sounds healthier.

I don’t know what to call it guys.

I do know however that this tastes pretty damn good.

Because of the sweet caramelised onions, this sandwich has a lot of flavour, and so the cheese plays a bigger role in the gooey texture department over the quantity of it. But remember, this is still cheese we’re talking about, so I recommend picking your favourite for ‘basic’ grilled cheeses because we’re using two cheese in this one!

Grilled Cheese w/ Caramelised Onions

Serves: 1               Calories per Serving: 375

Ingredients:

2 slices of sliced Sandwich Bread

30g/1oz Hard Cheese, grated finely

5g/1tsp Parmesan Cheese (grated, peels etc.)

50g/1/3 cup Onion, thinly sliced

5g/1tsp Butter

Water

Optional: Pinch of Sugar

Method:

Place a small frying pan on a high heat and throw in the onions with a splash of water. Cook the onions until  the water has evaporated, then add more water and repeat. Continue to repeat until the onions are soft and have started to brown a little. Then add the butter and fry the onions a little to caramelise them more. You can add the optional sugar with the butter to bring out the onions sweetness

Take one slice of bread and top with the grated hard cheese. Add the cooked onions on top of this, followed by the parmesan. Now place the second piece of bread on top and toast your sandwich, whether that be in a sandwich press, on a frying pan, in a toaster bag, or in my case – a waffle iron.
