Single-Serving Caramel Apple Pie Filling

Omg guyyyyyssss. Like guyyyyysss.

This though.

This delicious, rich, caramel-y, comforting, basically-healthy-for-you-because-i-left-the-skin-on-which-means-fibre apple filling.

It’s amazing. Like seriously who needs a pie topping or crumble topping or cobbler topping or any topping when you have this? Serve with ice cream and call it dessert. Serve with yoghurt and call it breakfast. Serve with anything really and just call it delicious. Any time of the day.

Nailed It.

And this is single-serving so I mean, no need to share.

Now I’ve nailed it.

Single-Serving Caramel Apple Pie Filling

Serves: 1                        Calories per Serving: 165

Ingredients:

1 small-medium Apple (whatever you like really)

1 small tsp Cornflour (4g)

1tsp Butter/Butter Spread (5g)

1T Dark Brown Sugar (12g)

Splash of Water (about 1-2T)

Sprinkle of Cinnamon

Pinch of Salt

Optional: about 2 dates, chopped (1 medjool?)

Method:

Chop up the apple into small-ish chunks, put them in a bowl and dispose of that nasty ol’ whore core.

Add all the other ingredients and stir up, don’t worry if the butter is still solid.

Pop the mix in the microwave and heat for 1 minute, then take out and stir up again, the mixture should all be one liquid at the bottom now, with no real lumps. Heat again in the microwave now for another minute. Now you should have a thick bubbling caramel. Stir to coat the apples completely in it and BAM!

That simple people.

with dates 🙂

Now go add some ice cream, eat and ponder if heaven exists. And if it does, is this what it would be?

Or add some dates into the mix before you microwave and forget any pondering because nothing else matters now.

Grilled Courgette Fries

They’re the shape of fries. Sort of. That’s about it.

But they sure do taste yummy!

So if you like courgette, and you like grilling, this is for you! Hopefully.

Try it. Find out.

This recipe makes enough for one but it’s not that hard to double triple, quadruple…..

Grilled Courgette Fries

Serves: 1          Calories per Serving: 35

Ingredients:

160g Courgette (2 long chunks)

Paprika & Salt

Method:

Take the long chunk of courgette and slice it in half lengthways. Now – also lengthways – slice the courgette into chunks, like you do with carrots and cucumber for dips.

Heat up a greased griddle pan (you can also do this on a barbecue) and cook the courgette fries, a few minutes either side or until charred nicely on the sides. Take off the heat and devour!

These taste good with ketchup. And sweet chilli sauce. And pretty much most dips you would commonly have with regular fries.

As you can see I really like vegetables…..

Enjoy!

What’s your favourite fast food fries? Or just any place that does fries. For me, you can’t beat a good McDonald’s every once in a while! 😉
