This delicious, rich, caramel-y, comforting, basically-healthy-for-you-because-i-left-the-skin-on-which-means-fibre apple filling.
It’s amazing. Like seriously who needs a pie topping or crumble topping or cobbler topping or any topping when you have this? Serve with ice cream and call it dessert. Serve with yoghurt and call it breakfast. Serve with anything really and just call it delicious. Any time of the day.

Single-Serving Caramel Apple Pie Filling
Serves: 1 Calories per Serving: 165
Ingredients:
1 small-medium Apple (whatever you like really)
1 small tsp Cornflour (4g)
1tsp Butter/Butter Spread (5g)
1T Dark Brown Sugar (12g)
Splash of Water (about 1-2T)
Sprinkle of Cinnamon
Pinch of Salt
Optional: about 2 dates, chopped (1 medjool?)
Method:
Chop up the apple into small-ish chunks, put them in a bowl and dispose of that nasty ol’ whore core.
Add all the other ingredients and stir up, don’t worry if the butter is still solid.
Pop the mix in the microwave and heat for 1 minute, then take out and stir up again, the mixture should all be one liquid at the bottom now, with no real lumps. Heat again in the microwave now for another minute. Now you should have a thick bubbling caramel. Stir to coat the apples completely in it and BAM!
That simple people.
Now go add some ice cream, eat and ponder if heaven exists. And if it does, is this what it would be?
Or add some dates into the mix before you microwave and forget any pondering because nothing else matters now.
